Ingredients:
1 cup mixed nuts (such as almonds, cashews, and walnuts)
1 cup breadcrumbs
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup grated carrot
1 tablespoon olive oil
1 tablespoon soy sauce
1 tablespoon nutritional yeast (optional)
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Vegan gravy (optional)
Instructions:
Preheat your oven to 350°F (180°C).
In a food processor, pulse the mixed nuts until coarsely chopped.
In a large mixing bowl, combine the chopped nuts, breadcrumbs, chopped onion, celery, grated carrot, olive oil, soy sauce, nutritional yeast (if using), dried thyme, dried rosemary, salt, and pepper. Mix well until everything is evenly combined.
Transfer the mixture to a lightly oiled loaf pan and press it down firmly.
Bake the nut roast in the oven for 40-50 minutes or until golden brown and firm to the touch.
Let the nut roast cool for a few minutes before slicing and serving with vegan gravy (if desired).
